Orange & BBQ Beef Stir Fry



I love stir fries.  They just seem so healthy with all the veggies.  This is a fairly quick and easy dinner for any night of the week.  It satisfies the meat eater and if you don't eat meat, just leave that off and you have a veggie stir fry.  Either way it is so divine.  The flavors dance around in your mouth.  I like my steak medium rare, so it just melted in my mouth.  Mmmm, I just can't get enough of this kind of good for you food.  I think it's better than any take out.  It's full of protein and fibre and just mouth watering.  I'm sure your family will love it, so give it a try and let me know how it turns out.




ORANGE & BBQ BEEF STIR FRY

TOTAL TIME:  @ 55 MINS 
SERVES:  3-4

RICE
2 c H20
1/2 tsp freshly ground black pepper
1/8 tsp salt
1/8 tsp Franks Red hot sauce
1/8 tsp Mrs. Dash Table Blend seasoning
1 garlic clove, grated
1 tbsp tomato paste
1 c organic, brown long grain rice

STEAKS
1 tbsp olive oil
3 (6 oz) beef steaks
Sprinkle of steak spice, freshly ground black pepper and small pinch of salt on each side

VEGGIE MIX
1 tbsp olive oil
1 large onion, diced
2 garlic cloves, minced
2 carrots, diced
2 celery stalks, diced
1 lg zucchini, diced
1 pkg (170 g) Portobello mushrooms, diced
6-8 bunches baby bok choy, roughly chopped
1/2 -1 tsp fresh ginger, grated
Couple splashes Franks Red hot sauce
1/4 tsp freshly ground black pepper
Small pinch salt
2-3 tbsp BBQ sauce
1/4 c orange juice
1 tbsp cornstarch



DIRECTIONS

In medium saucepan add all the rice ingredients except the rice.  Bring to boil.  Add rice, turn heat down to low (I put on #2 heat), cover and simmer @ 45 mins.  Remove from heat and let stand 5 mins.

After rice has been cooking about 20- 25 mins, add the tbsp of olive oil to large pan and spice both sides of steak.  Place in pan and sear on med high until nice dark crust forms.  Flip over and turn heat to medium.  Continue cooking until it's cooked to your liking.  Let sit 5- 10 mins covered with foil.

While the rice and beef are cooking, add the tbsp olive oil to a large pan.  Add everything up to and including the salt.  Stir fry on medium to medium high heat until veggies still have a small bite to them.  In a bowl add BBQ sauce.  In a medium glass or bowl add the orange juice and cornstarch and stir well to eliminate any clumps.  Pour into the BBQ sauce and stir well.  Add to the pan.  Bring to boil over med high heat, reduce and simmer until sauce thickens.  Serve veggies over the rice with diagonally sliced beef on top.  ENJOY!
