Tangy Halibut Burger

If you enjoy eating fish then I have the most excellent TANGY HALIBUT BURGER for you.  Even if you don't like fish I hope you'll give this a try because it is just so fantastic.  You won't even miss the meat.  I used a halibut fillet but you could also use cod or another white fish like basa or tilapia or salmon.  The only thing to note is halibut, cod and salmon are firmer, sturdier fish whereas basa or tilapia are more likely to fall apart more easily.  Just get whatever looks good at the store that day and has a good price.  Also, if you like more of an ingredient like dijon or hot sauce, feel free to add it according to your taste.

This is a healthier version of the beef burger.  I love making burgers because they are so versatile, however, fish burgers are also just as good but leaner without the added fat.  They are a source of high protein and vitamins and minerals our bodies need.  Fish are high in B vitamins such as niacin which help your nervous system to be healthy, as well as iron and selenium which aid in your thyroid functioning correctly.  Your risk of some cancers can even be reduced by incorporating fish into your diet at least twice a week.  Experts recommend eating one serving of white fish and one serving of an oily fish like salmon each week to gain the health benefits.  Fish is excellent in aiding weight loss and of course, the more fish you eat during the week, the more you'll notice it in your health.  If at all possible try cutting down on red meats and substitute fish or vegetarian meals instead.  There are so many healthy ways to cook fish that are delicious, including baking, broiling or steaming.  Deep fried fish we all know is not one of the healthy choices and should be eaten in moderation and with caution.  Cod liver oil contains vitamins A and D that are not present in the meat of the fish.  A supplement either in liquid form or capsules can be taken to benefit from these vitamins.



TANGY HALIBUT BURGER

TOTAL TIME:  30-40 MINS
SERVINGS: 2

HALIBUT

Olive oil spray
1 lb (1 lg) Halibut fillet
1/2 lime, juice of
1/8 tsp salt
1/4 tsp freshly ground black pepper
1/8 tsp Mrs. Dash Table Blend seasoning


ONION/MUSHROOM MIXTURE

1 tbsp olive oil
1 lg onion, sliced
1 garlic clove, grated
2 cups mushrooms, sliced
1 tbsp Worcestershire sauce
1/4 tsp freshly ground black pepper

BURGER SAUCE

2 tbsp sour cream
2 tbsp Miracle Whip (or mayo)
1 tbsp pickle relish
1-2 tsp dijon mustard
1 tsp fresh lime juice
1 tsp Franks Red hot sauce
1/8 tsp salt
1/8- 1/4 tsp freshly ground black pepper
1 small garlic clove, grated

2 whole wheat buns or 4 slices organic sprouted grain bread tstd
1 tomato, sliced
Couple handfuls spring lettuce mix   

DIRECTIONS

Preheat oven to 400 degrees F.
Spray a bit of olive oil spray in an oven safe baking dish.  Add halibut fillet.  Squeeze lime juice and sprinkle S + P and Mrs. Dash seasoning on top.  Bake in preheated oven for 20 mins or until flakes easily with a fork.   

For the onion/mushroom mixture, add olive oil to medium pan.  Add onion, garlic and mushrooms and saute on medium to medium high heat until softened and browned.  Add Worcestershire sauce and black pepper.  Keep warm on low heat until ready to use.

For the burger sauce, in a medium bowl add all ingredients and mix well.  Cover and refrigerate until ready to use.

Toast buns or bread.  Spread burger sauce on both halves.  Top one half with a piece of halibut and onion/mushroom mixture and the other half with lettuce and tomato.  Serve with tossed salad if desired.  ENJOY!
