Simple Homemade Chicken Broth & Chicken Noodle Soup


There is nothing better than a big bowl of Chicken Noodle Soup especially if it's homemade.  When you are not feeling well with a cold there is nothing else quite like it.  It seems to soothe your whole body.  It's what has been passed down generation to generation in almost every family.  Of course, you just can't beat homemade.  If you've never made it, don't feel intimidated.  It is actually very easy.  It just takes a bit of time to simmer it.  It needs at least a couple of hours to meld all those delicious flavors togetherThere aren't too many ingredients either.  You probably have them all in your fridge or pantry already.  

It's great on a cold winter day, especially if you are so fortunate to have a fire place to curl up next to while eating it.  Chicken Noodle Soup is very freezer friendly also.  If you make a large batch just pop it into the freezer in individual containers until you need it. 


As for the broth, it can be used for many other dishes.  It can be added into stews and stir-fries, rice and couscous can be cooked in it and you can baste meat with it to keep it flavorful and moist.  It's great to saute vegetables with broth if you are wanting to be a bit healthier.  If you just don't have the time to make homemade broth, the boxed broths in the stores are a great substitute, especially if you get the low sodium brands.  There are chicken, beef and vegetable flavored broths.  I've tried all and if you are short on time they definitely come in handy.  The boxes are usually 900 ml which equals 30 ounces or a little under 4 cups.  They can be stored on the shelf until opened and then need to be refrigerated where they can last up to 2 weeks.  If you'd like to freeze the broth, the best way is to pour it in ice cube trays, freeze and then dump the broth cubes into a ziploc bag.  This makes it super easy to grab one or two cubes and throw them in a pot of soup, stew or other dish to make it taste like you were in the kitchen all day making your delicious, flavorful meal.  

My SIMPLE HOMEMADE CHICKEN BROTH & CHICKEN NOODLE SOUP is very easy to make.  It just has to simmer for a while to become really flavorful.  Once you have it simmering, you can do something else and just stir it occasionally.  This broth is very mellow and low sodium.  You can, of course, add extra salt and pepper to taste.  Overall it's just a refreshing, comforting, satisfying light meal that I'm sure the whole family will like.

From chopped up veggies to a classic, hearty soup!


SIMPLE HOMEMADE CHICKEN BROTH & CHICKEN NOODLE SOUP

TOTAL TIME FOR BROTH & SOUP:  @ 3 HRS
SERVES 4-6 

CHICKEN BROTH

Cold H20
Bones of whole chicken
1 lg onion, cut into large chunks
4 med carrots, cut into large chunks
4 celery stalks, cut into large chunks
3 garlic cloves, peeled and smashed
1/2 tbsp poultry seasoning
1/2 tbsp thyme
1/2 tsp salt
1/2 tbsp freshly ground black pepper

DIRECTIONS

Put chicken bones into a lg pot.  Fill about 3/4 with cold H20 and bring up to a boil on maximum heat.  While coming to a boil add onion, carrots, celery, garlic and spices.  Once it starts boiling, turn heat down to a simmer, on about 3 or 4 heat.  Let simmer for 2 hrs 45 mins, stirring occasionally. 

 CHICKEN NOODLE SOUP

2 tbsp EVOO
1 lg onion, diced
4 carrots, diced
4 stalks celery, diced
2 garlic cloves, minced
Strained chicken broth @ 12-14 cups
1 c whole wheat rotini or other small pasta
1 tbsp Franks Red Hot Sauce (optional)
Extra S + P to taste at end of cooking time 

DIRECTIONS

Five mins before the broth is finished simmering, start the soup by adding EVOO to large pot.  Add onion, carrots, celery and garlic and cook on medium heat about 10- 15 mins.*  Add strained chicken broth to the pot and bring to boil.  Add  pasta and bring to boil again.  Reduce heat to medium and cook pasta according to package directions or your liking.  I cooked for about 10 mins.  Serve with whole grain bread of your choice.  ENJOY!

NOTE*
You could add diced chicken at this time.
